Chunky Mango Avocado Salsa

When mangoes are in season, I love making this Chunky Mango Avocado Salsa. It only takes a few minutes to make and tastes great on tacos, in salads, or with chips!

Depending on where you live, you may be able to buy this tropical fruit year round. But in early spring, I start seeing my favorite variety in stores, the Ataulfo or Champagne mango.

It’s smaller and the skin is all yellow. They grow in Mexico from March through July, and I love them so much, I buy them by the case!

But all varieties are wonderful to me.


I love them in salads, like Tropical Chickpea Salad and Cranberry Pistachio, and Mango Salad with Coconut-Peanut Butter Dressing. And of course I like them in smoothies, like Mango Mint Green Smoothie, Pitaya Green Smoothie Bowl, and Candy Corn Tropical Frozen Parfait.

They also make a delicious filling for summer rolls and sushi.

Or you can just eat them on their own for a tropical treat!

In case you didn’t know, mangoes and avocados are best friends. Their flavors and colors compliment each other, like peanut butter and jelly.
This salsa is easy to make and is great scooped up with tortilla chips, and makes a tasty topping for tacos and salads. I also enjoy it with a simple meal of rice and black beans.

Chunky Mango Avocado Salsa

If you enjoy mangoes, you will love this chunky salsa! It's easy to make and tastes great with all your Mexican favorites.

Ingredients

  • 1 cup mango cubed
  • 1 cup avocado cubed
  • 1 Tbsp lime juice
  • 1/4 cup red onion chopped
  • 1 tsp jalapeño pepper (or more) minced
  • 1/4 tsp ground cumin
  • 1/4 tsp chili powder
  • salt to taste
  • fresh cilantro (optional)

Instructions

  1. Combine all the ingredients in a bowl.
  2. Serve right away, or refrigerate to allow flavors to meld. Enjoy!
