As I mentioned earlier, these healthy Snickers bars recipe requires only 6 ingredients to make.

  • Coconut Cream: It's widely available in various grocery stores, but I highly recommend buying it at Trader Joe's.
  • Coconut Flour: Coconut flour is a unique alternative to wheat flour, a convenient option for people who follow a vegan or low-carb diet like keto, or for those with a gluten sensitivity or who are concerned about getting enough iron.
  • Peanut Butter (unsalted & unsweetened): To firm up the coconut flour and make a good base, I used peanut butter.
  • Pitted Dates (soaked in hot water for 10 minutes): When it's soaked and combined, you will get a naturally delicious caramel sauce.
  • Peanuts:  In the event that you cannot eat peanuts due to an allergy or preference, you can simply replace them with any type of delicious nuts you prefer.
  • Vegan Dark Chocolate Chips: You should use dark chocolate that does not contain any dairy products, to ensure that these Snickers remain vegan.

And if that doesn't interest you, feel free to use whatever chocolate you like!

Easy Homemade Healthy Snickers Bars (Vegan & Gluten-free) Recipe

There is something exceptional about these Healthy Snickers Bars, simple and healthy ingredients - the combination of chocolate, caramel and peanuts make them taste incredible!!! Also a vegan and gluten-free version!

Ingredients

Nougat Layer:

  • 1 13.5 oz can of coconut cream
  • 1/2 cup coconut flour
  • 1/2 cup peanut butter (Unsalted & unsweetened)

Delicious Dates and Caramel Sauce Layer:

  • 1 1/2 cups pitted dates
  • 1/2 cup peanuts
  • Chocolate coating:
  • 1 1/2 cups vegan dark chocolate chips

Instructions

Now, to make these healthy snickers bars, we’ll start with the easy vegan peanut butter nougat layer.

  1. Step one should line an 8×8″ baking tray with parchment paper.
  2. In a large bowl, pour about 3/4 can of coconut cream, coconut flour, and peanut butter.
  3. Using a spoon, mix all the ingredients well (coconut flour, coconut cream and peanut butter) until you get a nice texture.
  4. Pour the creamy mixture into the baking tray (prepared in advance) and place in the freezer for 15-20 minutes, until firm.

While the nougat is cooling, you can easily prepare the caramel sauce - here's all you need to do:

  1. In a food processor, blend the pitted dates well until creamy and smooth.
  2. Remove the frozen nougat layer from the freezer and sprinkle the peanuts on top. 
  3. Then spread the date caramel sauce over the peanuts (it may be sticky, but that's okay!). Just keep smearing!).
  4. Put the tray back in the freezer to cool completely for an hour.
  5. Now you have to complete the final stages of the recipe - heat the delicious chocolate chips either in a double boiler or in the microwave in graduated increments. But be careful if you put it in the microwave, be sure not to lose sight of it... Stir it and check it constantly, or it will burn.
  6. Now assuming that the chocolate is completely melted, set it aside.
  7. Take the pan out of the freezer and cut the caramel nougat layer into 12 even bars.
  8. Once again cover the tray with parchment paper, and bring two forks to use them to carefully take one bar after another and dip it in the melted chocolate until it is completely covered. Then carefully lift and place on butter paper.
  9. Repeat the same for the remaining bars and sprinkle any leftover chocolate over the surface of the bars and refrigerate for 12-15 minutes.
  10. Remove it from the freezer and enjoy it right away!
