Ingredients

To prepare the Lemon Keto Ice Cream Recipe, you will need:

  • 3 large eggs
  • 125 ml heavy cream 
  • 30 g erythritol 
  • 1 pc. lemon

Instructions

  1. Wash the lemon in lukewarm water, remove the zest,  squeeze out the juice and set aside
  2. Separate the whites and yolks. Beat the whites until strong peaks, and mix the yolks with the sweetener.
  3. Add the zest and lemon juice to the yolks. Mix the whites gently into the yolks
  4. Whip the cream and add the egg mixture to it
  5. Pour everything into your ice cream maker and freeze according to the manufacturer's instructions

Notes

  1. If you don't have an ice cream maker, you can flow the mixture into a bowl and place it in the freezer. Stir the future ice cream thoroughly every 20-30 minutes until the desired consistency is obtained. This can take up to two hours.
  2. Let ice cream stand at room temperature for 15 minutes before serving.

Ingredients

  • 250 ml almond milk
  • 350 ml  heavy cream
  • 50 g  erythritol
  • 1 tbsp coke oil
  • 1/4 teaspoon xanthan gum
  • 2 tbsp Instant coffee
  • 3/4 teaspoon vanilla flavor 

Instructions

  1. Combine almond milk and 250 ml cream in a saucepan over medium heat.
  2. Bring to a boil, then reduce heat and simmer, stirring frequently, until mixture is halved - about an hour.
  3. Remove mixture from heat, add erythritol and coconut oil, stir thoroughly. Then add xanthan gum, coffee, vanilla and whisk vigorously to combine.
  4. Cool the mixture to room temperature. Whisk the remaining cream until stiff peaks and stir into chilled mixture. Stir and place in the freezer for about 5 or 6 hours. Let ice cream stand at room temperature for 10 minutes before serving.

  4. Freeze for at least 2 hours until ice cream hardens.
